About The Destination
Rajasthani Cuisine
Rajasthani cuisine developed in a landscape short on water and fresh vegetables, which shaped a food culture built around grains, lentils, dairy and dried ingredients that keep well in desert heat. The result is some of India's richest, most distinctive regional cooking - generous with ghee and spice, and built for royal feasts as much as everyday meals.
Because the state's food varies by region, a Rajasthan trip is also a food journey: Jaipur's sweets, Jodhpur's snacks, Jaisalmer's desert staples and Udaipur's lakeside thalis all taste a little different, even when the dish shares a name.
